Lemon Cheesecake Popsicle

I recently bought some silicone popsicle molds. I’m pretty in love with them at the moment. If you don’t have a popsicle mold, you could easily drink this as a very thick smoothie as well. You might want to add a bit of almond or coconut milk in order to think it out, but the flavor is amazing right away in this popsicle recipe.

We’ve made a few really great popsicle types, but let me share just one (as a teaser…come back for more!): Lemon Cheesecake!

I do follow the recipe above pretty exactly with very minimal tweaks and will include a few of my own tips.

What you need:

4 bananas

2 lemons (or lemon juice)

2 tsp vanilla extract

2/3 cup cashews

First, you’ll need to plan ahead just a little. It’s the only unfortunate thing about this recipe, but also about popsicles in general. Soak the cashews for about an hour. Luckily, that isn’t long. So set them to soak and then go take a shower/fix breakfast/knit a sweater/whatever.

Juice the lemon and zest it. Make sure you take out the seeds (they are bitter!). I always juice into a custard cup so that they seeds don’t accidentally get in my blender. If you have an even better way, please share! If you don’t have a lemon like I didn’t last time I made these, it’s ok. It’s better with the lemon and the zest, but if you have lemon juice, you can use 3 1/2 tbsp of lemon juice in place of one lemon (so 7 tbsp for the whole batch).

Throw all of the ingredients in the blender! One time I used bananas that were mostly frozen. Luckily, my Vitamix can take it and with some vigorous blending, they smoothed out to a pourable mixture. I recommend using fresh, but if you’re like me, you may have to freeze bananas before they go bad sometimes. If you have a powerful blender, you should be fine. If not, you’ll want to make sure you use fresh bananas.

I doubled the original recipe. I have 12 popsicle molds and this recipe fills 10 of them, which is pretty good, in my opinion. It tastes surprisingly cheesecake-y and the texture is not very icy and more like a fudge or cream popsicle.
